What it’s like studying Commercial Cookery

So you like cooking…but do you need to formally study it? We spoke to:

Name: Billy Fox

Current Job:  Just got back from competing and working overseas and is getting ready for the Culinary Olympics

Studied: Certificate III in Commercial Cookery at TAFE NSW

How does a cooking apprenticeship work?

I did about 6 hours of practical a day and 2 hours of theory at TAFE – one day a week for two and half years. The other days you’re working in a kitchen. The teachers all have great industry knowledge from a wide range of areas and from all across the world so can help you with whatever speciality you want to go into be it asian or pastry, or whatever!

What’s TAFE like to study at?

Great! I’ve had a lot of opportunities to travel and work overseas – I got to work in a Michelin star restaurant in Singapore which has been really good for my career.

Cooking is such a great industry. You can work overseas, you can own your own business, run your own kitchen, develop your own food brand – basically it depends on how dedicated you are and how far you’ll let it take you.
